Winter Squash Soup



I've gotten a couple of (carnival?) winter squash from Johnson's Backyard recently. They're pretty big, so I decided to make a batch of soup out of them. Found this Winter Squash Soup recipe that's easy to make and freeze. It's a pretty standard cream of squash soup. Nothing amazing, but it makes for a good work lunch. If you have a bunch of squash that you need to use up, this is the perfect recipe. Used 1/2 cup of 2% milk instead of 1/4 cup heavy cream.
